Banana Nut Muffins Recipe

BANANA NUT MUFFINS!

This is a very simple recipe that is a great snack when you're on the go!

 

INGREDIENTS
4 fully ripe bananas, mashed
4 eggs
1/2 cup crushed walnuts
1tsp vanilla
1/2 cup coconut flour
2TBSP coconut oil, melted
1/2 cup almond butter
2tsp cinnamon
1tsp baking soda
1/4 tsp sea salt
1tsp baking powder

DIRECTIONS:
1. Preheat oven to 350 degrees F
2. Line a muffin tin with cups.
3. In a large bowl, add the bananas, almond butter, coconut oil, vanilla and eggs.
4. Using a hand blender, blend.
5. Add in cinnamon, coconut flour, baking powder, baking soda and salt. Blend!
6. Distribute the batter evenly into the lined muffin tins and fill each one about 2/3 of the way full.
7. Place walnuts on top of the batter mix and press lightly.
8. Bake for 20-25mins, until a toothpick comes out clean.
Serve warm or store in fridge or freezer!
